Christmas Treats to kick off the Holiday Spirit!

Christmas is just around the corner, which means it is the season of Christmas treats! Now that finals are over, it is time to treat your sweet tooth with these simple yet life-changing Christmas recipes to get you into the holiday spirit!


Traditional Shortbread:

In order to make this delicious traditional shortbread, you will need:


120 g of butter

¼ cup of caster sugar

1 cup of plain flour 

¼ cup of rice flour

Powdered sugar to dust off (optional)


First, preheat your oven to 320 degrees Fahrenheit. Line a baking tray with baking sheet paper and draw 25 cm circles on your paper. Turn the paper over. After this, melt your butter in a bowl in the microwave for about 30 seconds. Transfer the butter to a mixing bowl and pour in the caster sugar. Mix these two items in the mixing bowl until the mixture is pale & creamy. After you have reached this texture, mix the mixture in plain & rice flour until the mixture has turned into dough.  After this, make 20 cm disks of the dough and place it on the baking sheet paper. Pinch the edges to create a pinched crust and then place it in the oven. Bake for 30 mins or at least until it is golden brown. After it is cooked, place it out to cool & dust with powdered sugar. Most importantly, enjoy the delicious treat!


Raspberry & White Chocolate Scones

To create these delicious delites, you will need:


3 cups of self raising flour

1 cup of chilled lemonade

600 ml thickened cream 

150 g of frozen raspberries

150 g of white chocolate


To start off, first preheat your oven to 430 degrees Fahrenheit & line baking sheet paper to your baking tray. Pour the flour in a large bowl along with the lemonade & 250 ml of the thickened cream. Next add the raspberries & white chocolate. Stir until a soft dough is formed. After this dough has been created, dust your surface with flour and knead the dough on the floured surface until smooth. Flatten the dough and use a bowl or cutter to cut circles out of the dough. Place these on your baking tray & if you like, brush the unbaked scones with some of the leftover cream. Make sure not to use all of the cream since you will need it. Place the tray in the oven and bake for about 10-15 mins, or at least until golden brown. While this is baking, stir the remaining cream with preferably an electric mixer until it is fluffy. Once the scones are done baking, let them cool. Serve these delicious scones with whipped cream on the top & enjoy!
